Apricot crumble cake


Last week I bought 1 kg of apricots. I love them, but I can not eat 1 kg within one day. Usually you don’t have to, because the apricots don’t spoil within a few days. But that's exactly what happened to my apricots. When I wanted to eat a new apricot the next day, I realized that some were spoiled. And I still had so many. So what could I do? I did not want to make jam. And also no liqueur, because I have 2 others in the making. So I decided to bake a cake. I read some recipes in my cookbooks and then decided to make an apricot sprinkle cake.


You need:


For the dough:
For the topping:
400 g flour (300 wheat flour + 100 spelled flour)
150 g butter, room temperature
150 g sugar
125 g sugar
150 g of butter, room temperature
2 eggs 1 tbsp vanilla essence

500 g of quark


1 packet vanilla pudding powder

500 g apricots


Preparation time: 30 minutes
Baking time: 40 minutes
Ingredients for a baking tray (30 x 40 cm)


This is how we proceed:


Preheat oven to 200°C.

For the dough give flour, sugar and butter in a mixing bowl, mix and process to crumble. Cover a baking tray with baking paper and spread 2/3 of the crumbles on the tray. Press firmly. Bake in the oven for 10 minutes.

In the meantime, stir the butter and the sugar until fluffy. Add the eggs one after the other and stir until the mixture is creamy. Add the quark, vanilla essence and vanilla pudding and stir in. Spread the cream over the cake base.

Turn the temperature down to 180°C.
Wash, deseed and quarter the apricots and spread them on the cream layer.

Sprinkle the remaining crumbles over the cake.

Bake the cake for 30 minutes. Allow to cool, cut into pieces and serve.
