Watermelon-shrimps-salad


Sarah from Knusperstübchen is hosting a blog event where her readers and other bloggers can share their favorite summer recipes. I took this event as an occasion to show you one of my favorite summer salads: watermelon shrimp salad. In the summer I like to eat salads and this one I prepare every year.

You need:

2 limes
Shrimps
125 g baby spinach
Mint, chopped
1 red chili , deseeded and finely chopped
1 red, small onion
200 g watermelon, seeds removed, cut into chunks
Salt
Pepper
olive oil
Pine seeds

Servings: 2
Preparation time: < 30 Minutes


This is how we proceed:

  1. Put the zest and juice of one of the limes in a bowl and toss the prawns in it. Leave to marinate for 15 Minutes.
  2. Add baby spinach, mint, chopped chili, onion and watermelon in a bowl and mix.
  3. Heat 1-2 tbsp of oil in a pan. Add the shrimp to the pan. Fry from each side for about 2 minutes. Season with salt and pepper.
  4. Add shrimps to the salad in the mixing bowl and season with salt, pepper, lime juice and olive oil. Arrange on plates and garnish with pine seeds.
